Meal: Creamy Cajun Pasta

Ingredients
• 12 ounces smoked andouille sausage sliced into ½ inch pieces
• ½ tablespoon olive oil
• ¼ cup diced onion
• ⅓ cup diced bell pepper about 1 large pepper, or 3 mini peppers
• 1 tablespoon minced garlic
• 10 ounces diced tomatoes
• 2 cups low sodium chicken stock
• 1 tablespoon cajun seasoning
• 10 ounces rotini pasta
• 4 ounces cream cheese softened

Instructions
1. In a large stock pan, heat the oil over medium-high heat. Add in sausage, peppers, and onions and saute until the onions begin to soften for about 3-5 minutes.
2. Add in the garlic and saute for 1 minute longer.
3. Add in stock, diced tomatoes, and Cajun seasoning and bring to a boil.
4. Add in pasta, reduce heat to simmer, and cover with a lid. Cook for 10 minutes.
